Happy Easter from all of us aboard the Starship Enterprise!

trekkie easterIt’s Easter time again, so you know what that means.  Lots and lots of eggs.  And I bet you’re wondering, what in the world am I going to do with all of these eggs??!!?  Well first of all, I hope you are planning on decorating some and entering our COMPLETELY AMAZING EGG DECORATING CONTEST TO POSSIBLY WIN AN EASTER BASKET FULL OF GEEKY GOODIES.  Second, you can follow some tips from the Cardassians and make a platter of delicious Regova eggs!  No, I’m not going to show you how to win over a guy with a plate of Regova eggs, get married and then divorce him in 72 days.  You’re thinking of the wrong Cardassian.  So read on, and get ready to go where no man has gone before!

What you will need:

  • 1 dozen eggs
  • 1/3 cup mayonnaise
  • 1 tbsp minced onion
  • 2 tsp spicy brown mustard
  • 1/4 tsp tabasco
  • salt and pepper to taste
  • blue food coloring

Step 1:  Hard boil your eggs.  Don’t feel bad about boiling them.  They’re dead, Jim.

Step 2:  Peel the eggs and slice them in half lengthwise.  Remove the yolks from the centers and place them in a bowl.

Step 3:  Fill another bowl half-full with water and add the blue food coloring until you reach the color you like.

Step 4:  Place the egg white halves into the bowl of blue colored water.  Let the eggs sit in the water for 1 hour.  After 1 hour, remove the egg whites and place them on paper towels to dry.  They are now blue.  Fascinating.

melvin eggsStep 5:  While you’re waiting on the egg whites to turn a beautiful Regova blue, take the bowl of egg yolks and add the mayonnaise, minced onion, brown mustard, tabasco, salt and pepper.  Mix them all together.

Step 6:  Spoon the egg yolk mixture into the egg white halves.

Step 7:  Serve and enjoy.  And if you don’t enjoy the recipe, don’t blame me.  I’m a doctor, not a Cardassian cook!

    Ooo! Awesome recipe! I’m gonna use the yolk mix recipe next time I make them! A quick and easy way to get the yolk mix into the whites…put the mix in a ziplock bag, snip the tip of the corner and pipe it into the cups! Makes them look really fancy and really fills the egg up!
