Today is the much anticipated release of the Avengers movie… and you know what that means. It means Melvin and I have a hunger to rival the Hulk, and believe me, you wouldn’t like us when we’re hungry.
Also, do you remember Marti’s awesome Avengers Party post from earlier this week? There were a few fancy gadgets in her featured treasury that will come in quite handy in our recipes today. So put on your Captain America oven mitts, grab your Thor hammer shot glass and get ready for some delicious Avengers Party food!
Our Avengers Party menu consists of Captain America meatloaf cupcakes, Hammer of Thor strength-inducing drink and Iron Man ice cream. Sounds delicious, eh? Let’s get started with the Captain America dish. You will need:
Captain America Meatloaf Cupcakes
- 1 lb. ground beef
- 1 egg
- 1 cup bread crumbs
- 1 cup hot salsa, or any other vegetables you prefer
- salt and pepper to taste
Garlic Mashed Potato Icing:
- 3.5 lbs potatoes
- 2 tbsp. salt
- 2 cups half-and-half
- 6 cloves garlic
- 1 beet
- blue food coloring
Step 1: In a large bowl, mix all of your meatloaf ingredients.
Step 2: In a nonstick cupcake pan, spoon your meatloaf mixture into each cupcake hole.
Step 3: Bake in the oven at 350° for about 40 minutes. Set aside.
Step 4: Peel and dice the potatoes. Place them in a large saucepan, add the salt, and cover with water. Bring to a boil and cook until the potatoes fall apart easily.
Step 5: Wrap the beet lightly in tin foil and place on a baking sheet. Bake at 370° for 40 minutes. Once finished, slice and dice the beet.
Step 6: Heat the half-and-half and the garlic in a small pot over medium heat until simmering. Remove from heat and set aside.
Step 7: Drain the potatoes. Separate them into three bowls. Add the garlic-cream mixture to all three bowls.
Step 8: In one bowl, add the beets. This will turn the mashed potatoes into a bright red. In a second bowl, add a few drops of blue food coloring to reach a blue color that you like.
Step 9: Mix each of the bowls to ASSEMBLE all of the ingredients. Ha! Had to throw it in there.
Step 10: Pour each mashed potato color into a separate plastic bag or piping bag if you happen to have one. Pipe each color onto the top of one of the meatloaf cupcakes.
Step 11: Get ready to drink now, the hard part is all over!
Hammer of Thor Strength-Inducing Drink!
- 4 oz. vodka
- 5 oz. cranberry juice
- 3 oz. lager
Step 1: Mix all liquids into a glass.
Step 2: Drink.
Step 3: Throw glass on the floor and demand another.
Now for a sweet dessert to end the evening. There are two ways you can do this: you can either create your own yellow ice cream, or you can use mango sorbet. Whichever you prefer.
Iron Man Ice Cream
Ice cream (gold parts of suit)
- vanilla ice cream
- yellow food coloring
OR
- mango sorbet
Strawberry topping (red parts of suit)
- 1 pint strawberries, cleaned and sliced
- 1/3 cup white sugar
- 1 tsp. vanilla
Step 1: In a saucepan over medium high heat, combine the strawberries, sugar and vanilla. Cook for about 5 minutes.
Step 2: Pour the mixture into a blender and blend to a fine consistency.
Step 3: If you are creating your own yellow ice cream, mix the vanilla ice cream and a few drops of yellow food coloring in a bowl. If you prefer sorbet, spoon some mango sorbet into a dish.
Step 4: Pour the strawberry mixture over top of the ice cream/sorbet.
Step 5: Feel your arc reactor charging up!
