Whenever I’m down in the dumps, I can really eat some comfort food. And since my power supply died on my desktop computer two weeks ago, I have been pretty sad. So to cheer myself up, I went to the staple comfort food of baked macaroni and cheese. But not just any macaroni and cheese. Radiation exposed BlamCo Mac & Cheese! So if you want something to cheer you up and increase your health 1 hit point per second for 5 seconds, read on!
This awesomely delicious baked macaroni and cheese recipe is based off of one by a guy that I wouldn’t mind running through the Mojave Wasteland with, Alton Brown. You will need:
- 1/2 pound elbow macaroni
- 3 tbsp butter
- 3 tbsp flour
- 1 tbsp powdered mustard
- 3 cups milk
- 1/2 cup yellow onion, finely diced
- 1/2 tsp paprika
- 1 large egg
- 12 oz. sharp cheddar, shredded
- 1 tsp salt
- pepper, to taste
BlamCo Radiation Topping
- 3 tbsp butter
- 1 cup panko bread crumbs
Step 2: Cook the elbow macaroni in a pot of salted boiling water.
Step 3: While the macaronis are boiling, melt the butter in a separate pot. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure to break up any lumps. Stir in the milk, onion and paprika. Simmer for ten minutes.
Step 4: Temper in the egg. Stir in 8 oz. of the cheese. Season with salt and pepper.
Step 5: Fold the macaroni into the cheese mixture and pour into a casserole dish. Top with remaining cheese.
Step 6: Now for the radiation topping! Melt the butter in a pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs.
Step 7: Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Step 8: Enjoy your BlamCo Mac & Cheese! And remember, you can also use this to make a Wasteland Omelet… hmm… do I smell a future recipe in the works?
