Jiji, if nobody comes in, I’m gonna have to eat pancakes forever and be fat, fat, fat! And what am I supposed to do about that?
Well Kiki, Melvin and I can answer that for you. Eat more pancakes! Melvin and I thought it would be fun to do some recipes inspired by one of our favorite directors, Hayao Miyazaki. In Kiki’s Delivery Service, Kiki ends up eating pancakes because she’s a little low on cash. I think us fellow basement dwellers can relate to that. So if you’re finding that your wallet is looking a little slim, and you’re starving, take a cue from Kiki and whip up some pancakes! Kiki makes hers from a box, but we’re going to make ours from scratch. Want to learn how easy it is to make pancakes from scratch? Read on!
For this Kiki pancake recipe, here’s what you will need:
Kiki’s Pancake
- 1 cup flour
- 1 tbsp sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 3/4 cup milk (I use vanilla soymilk because it’s delicious)
- 2 tbsp vegetable oil
- sausage of your choosing
- 2 little tomatoes
Step 1: In a bowl, whisk together the flour, sugar, baking powder and salt.
Step 2: Add in the egg, milk and vegetable oil. Mix together well.
Step 3: Heat your pan over medium heat. If you have a nonstick pan, you’re good to go! If you have a regular pan, spray with non-stick cooking spray.
Step 4: Pour your batter onto the pan. I used to make the mistake of pouring a good amount of batter onto the pan, but I have now trained myself to pour small amounts.
Step 5: Cook until golden brown, about 3 minutes. Flip the pancake and cook the other side. You only want to flip the pancakes once!
Step 6: Prepare your sausage however you would like. I ended up boiling mine, and if you’re curious, I got a jalapeno and cheese sausage, yum!
Step 7: Cut your sausage in half, place on your plate with your pancake. Slice a pat of butter for the top of your pancake and drop two cherry tomatoes on there, and you’re ready for a deliciously cheap meal!
