Welcome back to the Kiki’s Delivery Service recipe recreations! Today Melvin and I are making the infamous Fish and Pumpkin Pie! I know that mixture sounds extremely strange, but believe me, it’s actually pretty delicious. Melvin was a little nervous at first about the fish, but he ended up eating the whole thing and didn’t even save me any! So if you’re a die hard Hayao Miyazaki fan, and you love trying new foods, then you really need to try this recipe out!
The recipe for Kiki’s Fish and Pumpkin Pie is based off of one made by Anna the Red… if you haven’t seen her website, you really need to check it out. She is amazing. Anyway, the Fish and Pumpkin Pie consists of layers of mashed butternut squash, fish and white sauce, all nicely packed within a pie crust. Here’s what you will need:
Mashed Butternut Squash Layer:
- butternut squash
- butter
- milk
- salt and pepper
Step 1: I purchased the butternut squash already cut and cubed, it came in a pretty handy little package. Drop the cubes of butternut squash into a pot of boiling water, boil until soft.
Step 2: Drain the butternut squash and place in a bowl.
Step 3: Mix in some butter and milk and mash the squash up. The amount of butter and milk you add in depends on what consistency of mashed squash you would like.
Step 4: Add salt and pepper to taste. Set aside.
- 5 tbsp butter
- 4 tbsp flour
- 4 cups milk
- 2 tsp salt
- 1/2 tsp nutmeg
Step 1: In a medium saucepan, heat the butter over medium-low heat until melted.
Step 2: Add the flour and stir until smooth. Cook until the mixture turns a light, golden sandy color, about 6 to 7 minutes.
Step 3: Heat the milk in a separate pan until just about to boil.
Step 4: Add the hot milk to the butter mixture 1 cup at a time, whisking continuously until very smooth.
Step 5: Bring to a boil. Cook 10 minutes, stirring constantly, then remove from heat.
Step 6: Add salt and nutmeg. A note about nutmeg: I wasn’t sure how necessary this would be, since it is such a small amount, but I think if there wasn’t nutmeg in this sauce, the sauce would really be quite boring. So don’t forget to add in the nutmeg! It is very important!
-
pie crust
- white fish- I used tilapia
- olives
- egg yolk
Step 1: In an ungreased pie pan, place the bottom layer of your pie crust.
Step 2: Layer the mashed squash on top of this bottom layer of pie crust.
Step 3: Place the fish on top of the squash.
Step 4: Drizzle your white sauce over top of the fish.
Step 5: Top with another layer of pie crust.
Step 6: Embellish the top of the pie crust with a fish and stripe design created from pie dough. Line the outer edge with olives. Brush the top of the pie with some egg yolk.
Step 7: Bake at 400° for 20 to 25 minutes.
Step 8: Enjoy your delicious Fish and Pumpkin pie! Let me know in the comments how yours came out! Because I know you’re dying to make one, am I right??
